I think that does happen in some cases, but it differs by team/coach. During the season, starting pitchers are pretty regularly on a once a week schedule. Not to say it will be exactly the same this year, but last year Mississippi State played in the College World Series as well. They ultimately played 4 games in 8 days (Saturday, Tuesday, Friday, Saturday). Looking at their starting pitchers at the CWS, Ethan Small pitched the first and the fourth games (so both Saturdays). They won their first two games, but had they been in the losers bracket Ethan may have pitched on slightly fewer days rest. I didn't watch, but I see Small through 102 pitches in a winning effort. Not the greatest line. Miss St plays tonight, have to assume zero chance he would pitch today. Next game then would either be Thursday if they lose or Friday if they win. I would think he would pitch the next game regardless of win or loss today.
